I’ve been looking for quick, healthy snack recipes recently, and I came across this recipe for energy balls at A Couple Cooks. I made it before work one afternoon and loved the result. These are great for a quick snack before a workout, on your way out the door, or midway through the day when you need a bite to eat.
If you make these, I’d love to hear how they turned out and what you thought! These would be fun to try with different flavor variations too.
Easy Energy Balls
Equipment
- 1 1/2" cookie scoop
Ingredients
- 2 cups old fashioned rolled oats
- 1/2 cup peanut butter no sugar added, or any nut butter or sunflower butter for nut free
- 1/3 cup honey agave syrup for vegan
- 1/4 tsp kosher salt
- 1/4 tsp cinnamon
- 1/4 cup protein powder vanilla or chocolate; this is optional
- 3 tbsp mini chocolate chips
Instructions
- Mix all ingredients together in a bowl. Freeze the bowl for 5 minutes.
- Roll the dough into 20 small balls, pressing the dough together with your hands. We used a 1 1/2-inch cookie scoop (#40) to make uniform balls. You can also make smaller balls if desired. (If the texture of your nut butter makes the dough very dry, add a little more honey or a few tablespoons milk of choice until you can press it together into a ball shape.) Refrigerate for up to 2 weeks. Enjoy!
