Lemon Curd

Ingredients
  

  • ½ cup sugar
  • 1 tbsp cornstarch
  • 2 tsp lemon zest
  • ½ cup lemon juice
  • 2 eggs slightly beaten

Equipment

  • 1 lemon zester
  • 1 lemon juicer

Method
 

  1. In a 1 quart saucepan, mix sugar and cornstarch. Stir in lemon peel, lemon juice, and eggs with whisk until blended.
  2. Cook over medium heat about two minutes, stirring constantly, until mixture thickens and boils.
  3. Remove from heat; transfer to bowl. Cover with plastic wrap and refrigerate 30 minutes or until completely cool.
