in the kitchen: protein blueberry crumble

hello, my lovely friends! while I was home on Christmas break, I spent some time going through my saved recipes on Instagram and Pinterest, actually writing them down and trying a few XD this blueberry crumble from Domenique is so delicious, especially after a long, cold run in the snow. the cinnamon adds a nice cozy taste too. this is definitely going to go in my breakfast recipe rotation!

Protein Blueberry Crumble

Servings: 1 person

Ingredients Method

Ingredients
  

  • 1 cup blueberries thawed
  • 1/2 tsp cornstarch
  • 1/3 cup oats gluten free
  • 1 scoop protein powder I use rice or pea protein
  • 1/2 tsp cinnamon
  • 1/2 tsp maple syrup or honey
  • 2 tbsp water
  • pinch of salt

Method
 

  1. In a microwave safe bowl add the blueberries and squash them with a fork. Then add the cornstarch and mix well. Microwave for 1 minute.
  2. In a second bowl mix the oats, protein powder, cinnamon, maple syrup, salt and water (make sure the water is added last) Mix until it forms a crumbly texture. The oats should look wet but you don’t want any excess fluid. You can add more water if you need it.
  3. Pour the oats mixture on top of the blueberries and microwave for 1 minute. Let cool for a few minutes before eating.
